Compressed cucumber, salt-baked beetroot, wasabi yoghurt

Duck confit and foie gras ballotine
Spiced plum chutney, toasted brioche, organic Jersey leaves

Freshly peeled crevettes
Spicy Marie Rose sauce, buttered brown bread, watercress

Slow cooked hen’s egg
Sauteed chorizo, fried sourdough breadcrumbs, charred broccoli

Leek and potato veloute (v)

Yorkshire pudding, caramelised onion, celeriac remoulade, seasonal vegetables,
