Tim Spedding

Formerly the Head Chef of the award-winning Clove Club in Shoreditch, Tim worked alongside the owners since the foundation of the restaurant for three and a half years earning 1 Michelin Star and recognition as one of the world’s best restaurants at the Restaurant Magazine annual awards.

During that time Tim Spedding was responsible for instilling very high standards and a culture of excellence in the kitchen & front of house. Prior to The Clove Club Tim worked for four years at The Ledbury in Notting Hill at a time when the restaurant won 2 Michelin Stars, was ranked highly in the 50 best list, as well as a host of other national awards.

Before moving to Cornwall he undertook  a seven-month residency at the Clapton Wine bar P Franco. This was a great opportunity to have some fun and start to develop his own style of food. Although it is a very unassuming casual place, P Franco has a very strong following in the restaurant industry and his stint was very well received with visiting chefs and sommeliers from overseas often coming in to try something unique to the London dining scene.

Prior to working in London, he worked overseas at Quay in Sydney and at a very small but beautiful restaurant in the southwest of France. He also had the privilege of working in some great kitchens in Copenhagen, Mexico, Stockholm and Paris.
