Ian Swainson

Ian Swainson is a chef who has won a multitude of accolades, including a Michelin Star, with over 20 years of experience working for some of the best chefs in Europe.

In 2004 Ian first met Will Holland, both starring in the opening brigade at L’Ortolan Restaurant in Reading and then working side by side for the following 7 years. In this time proudly opening La Bécasse Restaurant, where Ian was sous chef under Will, and achieved many awards, including a Michelin Star and 66th best restaurant in Great Britain.

Years later Ian has had a very prestigious career in top establishments and now is the proud owner of Amarillo Restaurant in Brighton, where he creates tasting menus using the finest ingredients in an elegant yet contemporary fashion.
