The Christmas festivities draw to a close with a sumptuous dinner and some light entertainment


To start

Peppered Jersey beef carpaccio
Aubergine puree, cheese croutes, rocket, sweet and sour aubergine

Salmon slowly poached in olive oil
Lightly spiced lentils, raw apple, Jersey yoghurt, lemongrass jelly

Chicken, foie gras and leek terrine
Baby leek and truffle salad, chicken crackling, truffle mayonnaise

Grilled smoked haddock fillet
Crispy hen’s egg, Jersey potato veloute, parsley dressing

Goat’s cheese mousse (v)
Gingerbread crumb, salt-baked beetroot, pickled blackberries

Butternut squash, caramelised chicory, Seville orange glaze, duck jus

Roast lamb chump
Boulangere potato, tenderstem broccoli, minted Hollandaise sauce

Roasted monkfish tail
Curried mussels, confit peppers, coriander oil, baby pak choi

Steamed sole and scallop mousseline paupiette
Salt-cod brandade beignets, wilted greens, roast chicken sauce
