Pink grapefruit segments, shaved fennel, grapefruit zest puree

Chicken and trompette mushroom terrine
Tender leeks, chicken crackling, truffle mayonnaise

Home-cured salmon gravlax

Pan-fried halibut fillet

Salt hake brandade, wilted greens, roast chicken sauce

Pot-roast curried cauliflower (v)
Coconut and cauliflower puree, coriander seed granola, curry oil, coriander
