Changing to follow the seasons and produce available, Will Holland’s a la carte menu is inspired by the varied ingredients to be found in Jersey and its waters

Pickled Jersey crab
Mango salsa, curried mayonnaise, warm brown crab cakes, coriander

Foie gras ballotine
Carrot, orange and vanilla puree, gingerbread, kumquats, blood orange dressing

Salmon tartare
Jersey Royal and creme fraiche mousse, Jersey oyster beignet, English caviar

Ham hock and smoked chicken raviolo
Pea puree, summer vegetables, smoked egg yolk, pea shoots

Crispy Old Winchester cheese risotto (v)
Salt-baked celeriac, confit cherry tomatoes, pesto, cheese galette, toasted pine nuts

Beef – roasted fillet and braised short rib
Caramelised chicory, artichoke hearts, bone marrow beignets, herb salad

Pan-roasted turbot fillet
Parmentier potatoes, wilted spinach, samphire, cockle and parsley brown butter

Herb-crusted lamb loin
Braised lamb neck, gratin potatoes, asparagus spears, tomato and mint jus

Butternut squash and Douet Farm goat’s cheese fondant (v)
Chickpea salsa, couscous, smoked aubergine puree, parsley and sumac salad

Grilled Jersey seabass fillet
Jersey Royals, leeks, rosemary infused cream sauce

Jersey strawberry assiette
Strawberry meringue, vanilla panna cotta, strawberry sorbet

Chocolate delice
Sacher sponge, cocoa nib cremeux, vanilla ice cream

Black Forest
Cherry chocolate mousse, Opalys namelaka, cherry sorbet
