Changing to follow the seasons and produce available, Will Holland’s a la carte menu is inspired by the varied ingredients to be found in Jersey and its waters

Picked claw meat, locally collected sea vegetables, confit tomatoes, mascarpone

Classic foie gras ballotine
Bay leaf jelly, smoked duck breast, caramelised apple, ‘quackling’, toasted brioche

Home hot-smoked salmon fillet
Braised lentil salad, citrus jelly, Jersey yoghurt, garam marsala dressing, coriander

Seared peppered beef fillet carpaccio
Smoked egg yolk, gribiche sauce, sour dough wafer, baby gem and alliums salad

Whole burrata (v)
Jerusalem artichoke – puree, salt-baked, pickled and crisps, hazelnuts, truffle dressing

Red wine marinated venison loin
Dauphine potatoes, forest mushrooms, charred sprouting broccoli, blackberry jus

Roast guinea fowl breast
Guinea fowl pastilla, crispy potato cake, pickled pear, garlic cavolo nero

Chinese five spice seasoned local sea bass fillet
Braised red cabbage, roasted salsify, king oyster mushroom, cep cream sauce

Steamed lemon sole paupiette
Jersey lobster tortellini, tarragon puree, cucumber ‘tagliatelle’, samphire, lobster bisque

Salt-baked celeriac Wellington (v)
Mushroom duxelles, garlic curly kale, glazed chestnuts, roasted celeriac sauce

Lemon sesame
Oolong namelaka, lemon bavarois, black sesame ice-cream

Malted milk
Chocolate sable, mango and passion fruit, barley and malt ice cream

Winter fruits
Plum and blackberry creme, red wine jelly, plum sorbet

Black Forest delice
Cherry and chocolate mouse, dark chocolate soil, cherry sorbet
