Ratatouille farced courgette flower, Parmesan polenta, black olive and basil jus

Roast guinea fowl breast
Confit guinea fowl leg pastilla, morels, white garlic puree, wild garlic, morel cream sauce

Pan-roast halibut fillet
Asparagus spears, brown hazelnut butter, parsley puree, roast chicken juices

Dashi-glazed plaice fillet
Spring vegetables, Jersey Royal ‘pearls’, sesame and pink ginger dashi

Old Winchester cheese risotto raviolo (v)
