Coconut and celeriac panna cotta, tomato and basil essence, sweet and sour celeriac

Classic foie gras ballotine
Home-smoked duck, pickled charries, duck skin ‘quackling’, toasted brioche

Soy and sesame king prawns ‘a la plancha’
Compressed cucumber, prawn tartare, guacamole, wasabi and coriander yoghurt

Seared peppered beef fillet carpaccio
Smoked egg yolk, gribiche sauce, sour dough wafer, baby gem

Onion marmalade and cheese fondue tart (v)
Barbecued leeks, red wine pickled shallots, crispy onions, green onion oil

Roast Scottish venison loin
Haggis bonbons, glazed baby beetroots, garlic curly kale, bitter chocolate sauce

Roast guinea fowl breast
Confit thigh, smoked cep puree, crispy potato terrine, cavolo nero, roasting juices

Butter-roasted brill fillet
Bone marrow and red wine sauce, potato puree, sprouting broccoli

Grilled sea bream fillet
Jerusalem artichokes, Gewurztraminer sauce, watercress, fresh truffle

Potato, rosemary and Old Winchester cheese gnocchi (v)
Caramelised Roscoff onion, white bean and root vegetable cassoulet


To finish

White chocolate, miso and apple
Whipped ganache, almond sponge, opalys and miso ice cream, shiso oil

Rhubarb, ginger and kalamasi
Kalamansi cheesecake mousse, rhubarb and candied ginger compote, rhubarb sorbet

Winter fruits
Plum and blackberry curd, mulled wine jelly, chocolate sable

Mandarin and macadamia nut
Ocoa and cognac parfait, mandarin gel, macadamia nut ice cream
