Aioli, garlic and herb butter, chilli flakes, organic Jersey leaves

Goat's cheese and pesto flatbread fresh from the wood oven (v)

Sliced oak-smoked salmon
Blinis pancake, horseradish yoghurt, cucumber and mustard seed relish

Roast chicken terrine
Brioche sauce, red wine pickled shallots, bacon crumb, crispy chicken skin

Jersey Royal veloute (v)
Poached egg, wilted spinach, herb oil, chopped chives

Treacle-glazed pork belly fresh from the barbecue
Rhubarb compote, Jersey Royals cooked in embers, apple, walnut and watercress salad

Chargrilled sea bream fillet fresh from the barbecue
Tomato couscous, artichoke hearts, olive, basil, and preserved lemon dressing

Roast beef sirloin
Yorkshire pudding, roast potatoes, celeriac remoulade, caramelised onion, crushed swede and carrot, seasonal greens, red wine sauce, horseradish cream

Roast cod fillet
Seared squid, chorizo risotto, charred tender stem broccoli, avocado puree, smoked paprika

Pearl barley (v)
Barbecued leek, baby onions, crispy shallots, parsley dressing, onion ash

To finish

Dark chocolate tart
Jersey raspberries, honeycomb, caramel and peanut ice cream

Rum baba
Barbecued pineapple, mango and chilli salsa, Chantilly cream

Sheep's yoghurt panna cotta
Macerated strawberries, Italian meringue, strawberry and lovage sorbet
