Barbecued aubergine puree, rocket, Gruyere toast

Forest mushroom veloute (v)
Wilted spinach, truffle cream, chopped chives

Sauerkraut, roasted salsify, pickled blueberries, bitter orange

Glazed duck breast
Salt-baked carrot, caramelised chicory, marmalade sauce

Poached brill fillet
King oyster mushroom, potato puree, garlic cavolo nero, cep nage

Roast monkfish tail
Charred mussels, tandoori coconut sauce, pak choi, coriander

Freshly rolled tagliatelle (v)
Roscoff onions, creamed watercress, crispy kale
