Atlantic Hotel Executive Chef Will Holland heads to Thailand to share culinary expertise at the Nai Harn

Will Holland, who has now been working at The Atlantic Hotel as Executive Head Chef for three months, has headed to Thailand during the hotel’s annual closure in January where he will be spending two weeks cooking at Rock Salt and Cosmo restaurants at The Nai Harn Resort, Phuket.


Mark Jones, Executive Chef at The Nai Harn has invited Will to make a guest chef appearance having worked on successful guest chef events with him previously.


Will Holland will be cooking at Rock Salt restaurant serving a variety of blackboard specials including pan-fried scallops with Bloody Mary dressing and Moroccan style lamb chump with smoked aubergine purée. In addition to this he will be cooking at an exclusive BBQ canapé event on the hotel’s rooftop terrace including king prawns with exotic fruit and slow roasted squash with goat’s cheese and amaretti biscuit.


Will’s series of guest chef events will climax with a six course Degustation Menu at Cosmo Restaurant for 3750 baht (£85.00) which will include local sea bass fillet, a suckling pig tasting plate and an extraordinary brown bread ice cream dessert.
