Patrick Burke, Managing Director

Educated at St Michael's School, Jersey and Stowe School, Buckingham, Patrick gained an Honours Degree in Hotel and Catering at the University of Surrey.

This was followed by management experience at two of London's leading five star hotels – The Carlton Tower in Knightsbridge and the Intercontinental at Hyde Park Corner. In 1987 Patrick succeeded his father as Managing Director of The Atlantic and soon embarked on a development programme to upgrade every aspect of the property – a process which led to The Atlantic's admission into membership of Small Luxury Hotels of the World in 1993 – and continues to this day.

Nicholas Walley, Hotel Manager

With more than 17 years' experience in hospitality, Nicholas (Nick) Walley joined the team at The Atlantic Hotel in September 2016 as Hotel Manager.

Prior to his move to Jersey, Nick worked at some of Britain's most prestigious establishments including the five-star properties Chewton Glen, The Ritz Hotel, Ellenborough Park and The Vineyard at Stockcross. Nick is proud to be a St Julian's Scholar having passed the scholarship programme of The Master Innholders, during which he benefitted from a management training course at Cranfield School of Management. Nick looks forward to discovering the joys of island life with his young family.

Stephanie Paddock, Marketing and Communications Manager

An experienced marketing professional and a specialist in the luxury sector, Stephanie Paddock is The Atlantic Hotel’s Marketing and Communications Manager.

Born and educated in the island, Stephanie has previously worked at Grand Jersey and prior to joining the team at The Atlantic Hotel in 2014, Stephanie spent almost three years with the Dolan Group, managing marketing activity across four properties. Stephanie is currently studying for the Diploma in Professional Marketing from the Chartered Institute of Marketing.

Hayley Brockwell, Reservations Manager

A native islander, Hayley first joined The Atlantic after leaving college in 1982 and has now been with the hotel for 30 years.

Currently Reservations Manager, she has experienced the evolution from manual bookings to a computerised system, the internet and e-mail, and she enjoys the day to day variety of her role and the contact she has with old and new guests. She loves The Atlantic's family atmosphere and friendly team, as well as Jersey's tranquil lanes and spectacular views. Away from The Atlantic, Hayley divides her time between visiting her family's timeshare in Tenerife and walking along the island's cliff paths.

James Peters, Assistant Manager

Former Hotel Manager of the five-star Marcliffe Hotel & Spa in Scotland, James joined the team at The Atlantic Hotel in 2016 as Assistant Manager.

He has more than ten years of hospitality experience gained at a number of well known hotels in the UK including the five-star Prestonfield House Hotel, Edinburgh where he was Assistant Restaurant Manager at the hotel’s Rhubarb restaurant. 

James was educated at the distinguished George Heriot’s School in Edinburgh. His qualifications include HNC Professional Cookery, WSET Level 2 and the National Certificate for Personal Licence holders amongst others.


Rui Faia, Guest Services Manager

Rui Faia is our Guest Services Manager. Born in Madeira, Rui first came to Jersey and The Atlantic Hotel in 2000.

Rui started out in Ocean as a Commis Waiter and worked his way up to Head Waiter before being promoted to the position of Guest Services Manager in 2007. Rui takes great pride in ensuring that everyone who walks through the doors is well looked after and particularly enjoys welcoming back regular guests. His favourite time of the year is the spring when the hotel grounds come alive.

Andrew Esson, Junior Assistant Manager

Andrew first joined The Atlantic Hotel in 2014 as a Hall Porter before moving up to the position of Senior Hall Porter in 2015 and then being further promoted to the role of Junior Assistant Manager in 2016.  

Born in Scotland and educated at Strathclyde University, Andrew is an extremely engaging host and likes to focus his attention on delivering the highest standards of customer service, from making recommendations on the best beaches to visit to ensuring that guests have everything they need for an enjoyable stay.

Mark Jordan, Executive Head Chef

Mark decided at school that he would pursue a career as a chef, and his first job saw him spend three years with Keith Floyd before he met Jean Christophe Novelli.

Novelli had a profound effect on Mark as he inspired him to create food of a Michelin Star standard by introducing him to the best combinations of ingredients which appeal to the five senses of cooking: smell, taste, texture, touch and sight. Mark joined The Atlantic as Head Chef in July 2004 from Gilpin Lodge Hotel near Windermere in The Lake District, having fallen in love with Jersey on his first visit.

Shaun Burke, Head Chef

Shaun Burke is the talented Head Chef at The Atlantic Hotel, having first joined the kitchen brigade as a Chef de Partie.

Shaun was born and educated in Jersey where he achieved a Diploma in Culinary Arts at Highlands College. Following his training he took a position at Le Gavroche, working there for a year before returning to Jersey.

Shaun enjoys creating dishes with the fantastic local produce available on the island, especially the wonderful seabass and turbot, and of course the iconic Jersey Royals.

Jaroslaw Nowakowski, Head Pastry Chef

Originally from Poland, Jarek rejoins the team at The Atlantic as Head Pastry Chef following time spent back in his country with his young family. Jarek studied hotel management and catering at university in Poland, spending time in England, Greece and France as part of his course.

Deciding on a career as a pastry chef, he has previously worked at a number of prestigious establishments, including Midsummer House, Cambridge and Le Manoir aux Quat Saisons, and has completed a ‘stage’ at Noma in Copenhagen, the quirky Nordic venue voted the world’s best restaurant in 2010, 2011 and 2012. Jarek is known for his impeccable attention to detail, use of the finest ingredients and his belief that every dish must be of the same consistent high standard.

Corina Tagorean-Rodrigues, Restaurant Manager

Joining The Atlantic Hotel as Restaurant Manager in April 2017, Corina brings a wealth of experience in Michelin-starred restaurants to Ocean.

Inspired by a childhood love of food and a background in food engineering, Corina's time as Senior Head Waitress at Bohemia Restaurant at The Club Hotel & Spa in St Helier was her first introduction to Jersey's fine-dining scene. This in turn opened the door to further Michelin experience in the heart of London at Jason Atherton's Pollen Street Social and most recently at Galvin La Chapelle.

Jonas Lucas, Assistant Restaurant Manager

Born and raised in Brittany just across the water from Jersey, Jonas has been Assistant Restaurant Manager at Ocean Restaurant since February 2017 having first joined the team the previous year as Head Waiter.

Jonas' training in France and subsequent experience further afield provided him with a good grounding in the hospitality industry. His travels took him from Val d'Isere in the Alps to a coastal retreat in Ireland and a country house hotel in Dorset. Inspired by the camaraderie of the team and enthused by the excitement of a busy restaurant, Jonas enjoys meeting guests and providing a warm welcome to Ocean Restaurant.

Richard Burton, Head Sommelier

Richard Burton is passionate about fine wines and gastronomy, having worked in the hospitality industry since 1995.

Joining the team at The Atlantic Hotel in 2014, Richard’s previous experience includes time spent at the prestigious Relais & Châteaux property The Inn at Little Washington in the United States, the renowned restaurant The Crab at Chieveley in Berkshire and Midsummer House in Cambridge, holder of two Michelin stars and 5 AA rosettes.

Steven Firkins, Head Gardener

Originally from the North West of England Steven has always had a love of gardening. Prior to coming to Jersey in 2005 Steven worked in the logistics industry in the UK. Following his arrival in the island he decided to take the leap and make his passion for plants and planting his career.

Steven originally took a short-term position at Samares Manor, but found that he enjoyed it so much he remained in the role for six years. Steven is now responsible for maintaining the six acres of gardens and grounds that surround The Atlantic Hotel and ensuring that they are always kept in pristine condition for guests to enjoy.
