Changing to follow the seasons and produce available, Will Holland’s a la carte menu is inspired by the varied ingredients to be found in Jersey and its waters


To start


Jersey crab - picked white claw and brown crab beignet
Pork rillettes, crab apple jelly, pork crackling

Seared Jersey scallops
Smoked haddock, creamed leeks, soft herb crust, white wine sauce

Oxtail consomme
Braised oxtail, smoked bacon, onions, thyme emulsion, oxtail butter

Foie gras ballotine
Apple and blackberry chutney, candied walnuts, blackberry puree, toasted brioche

Goat’s cheese mousse (v)
Mulled wine poached figs, beetroot and fig puree, nut granola

Roast monkfish tail
Bubble and squeak, shellfish cream, wilted greens, red wine sauce

Pan-fried halibut fillet
Salt-baked celeriac, brassicas, hazelnut, caper and parsley brown butter

Roast venison loin
Chicory, caramelised artichoke puree, forest mushrooms, cocoa nib crumb

Roast Jersey beef sirloin
Bread and beef fat pudding, savoy cabbage, grelot onions, red wine sauce

Wild mushroom risotto (v)
Smoked egg yolk, tempura mushrooms, aioli, watercress

Seaweed poached pear
Yoghurt mousse, crunchy honey oats, pear sorbet, honey and seaweed tuile

Caramelised white chocolate panna cotta
Hazelnut sponge, praline ganache, Jerusalem artichoke ice cream

Carrot cake
Cream cheese ice cream, carrot, orange and vanilla puree, candied walnuts

Iced dark chocolate parfait
Salted caramel jelly, caramelia chocolate curd, poached black cherries
