Changing to follow the seasons and produce available, Will Holland’s a la carte menu is inspired by the varied ingredients to be found in Jersey and its waters

 

To start

 

Jersey crab - picked white claw and brown crab cake
Mango salsa, aromatic mayonnaise, coriander

Seared scallops
Pork belly nuggets, asparagus, hazelnut butter, pink grapefruit

Braised pork cheek and seared prawn
Jerusalem artichokes, wild garlic emulsion, truffle dressing

Foie gras ballotine
Kumquat compote, candied walnuts, blood orange puree, toasted brioche

Pan-fried goat’s cheese and potato terrine (v)
Forced rhubarb – puree, pickled and jelly, salad leaves, potato crisp

Tandoori-roast monkfish tail
Freshly rolled tagliatelle, confit peppers, pak choi, mussel and coconut sauce

Pan-fried turbot fillet
Crab risotto, locally collected sea vegetables, crispy shallots, onion oil

Roast new season lamb loin
Lamb shoulder potato cake, mint jelly, tenderstem broccoli

Roast Jersey beef sirloin
Bread and beef fat pudding, mushroom ketchup, grelot onions, red wine sauce

Wild mushroom risotto (v)
Smoked egg yolk, tempura mushrooms, aioli, watercress

Lime leaf panna cotta
Basil poached peach, fresh raspberries, meringue, peach granite

White chocolate and vanilla cheesecake
Compressed strawberries, ginger snap biscuit, strawberry sorbet

Carrot cake
Cream cheese ice cream, carrot, orange and vanilla puree, walnuts

Iced dark chocolate parfait
Salted caramel jelly, caramelia chocolate curd, poached black cherries
